What You Will Need:
1 Organic Banana, ripe
2 Organic Eggs
1/4C Organic Apples, chopped finely
3T Walnuts, chopped finely
2T Bob Mill's Old Fashioned Oats
1/2t Vanilla Extract
Saigon Cinnamon (optional)
Young Living Cinnamon Bark Essential Oil
Young Living Blue Agave
1T Organic Coconut Oil
Use a fork to smash the banana until little or no lumps appear. Whisk 2 eggs in a separate bowl. Add mashed bananas to egg mixture until combined.
Add your chopped apples, chopped walnuts and oatmeal. Next, add vanilla and a drizzle of Young Living Agave Syrup (to your preference) and mix thoroughly. Take a toothpick and dip end in the top of the bottle of Young Living Cinnamon Bark essential oil. Drag toothpick with essential oil in mixture.
Add 1/2T coconut oil to frying pan, allow time for it to heat up and melt coating the pan. Using a measuring cup, scoop mixture as you would pancakes. You will know it needs to be flipped when the edges look firm (see video below). Wider spatulas seem to make for an easier time flipping since it's a little more fragile than a conventional flour-made pancake. Add 1/2T coconut oil to each batch of single pancakes or if you have a larger pan, you can add the full tablespoon and cook at one time. :)
Serve with drizzles of Young Living Blue Agave or local honey. Best part about this breakfast grub is it's gluten-free and no sugar added.
